Pasilla (1,000–4,000 SHU)- Known as the “little raisin” these flakes are milder compared to the Jalapeño/Chipotle and have an earthy/smoky taste. When consumed fresh or roasted they are often processed in their green state but we grow them to full maturity so they develop their full flavor profiles. Their fruity-smoky taste comes about naturally from the dehydration process (we don't smoke dry them like we do with the Chipotle) At full maturity their outer skin turns a beautiful dark brown color and they are red on the inside!
Some common uses include as a base in mole sauces, unique salsas, and in marinades for meats or mushrooms. Sprinkling them onto meat dishes can add a nutty/smoky taste and they can also add a lot of complex flavors to roasted vegetables. They often combine very well with our Guajillo and Chipotle peppers to make for very colorful meals!
